This interactive live-stream event is perfect for food and culture enthusiasts who love to discover Mexican flavors. This virtual event hosts up to 100 participants and gives food explorers the opportunity to connect with people who are eager to mix and mingle with others online and learn how to cook with the guidance of a professional chef!

About the Chef

Chef Jair loves the kitchen, experimenting with new ingredients, creating new flavors while sharing his experiences with people, and creating memories with them. He is our professional Chef out of Mexico. Living in South Mexico, Jair is used to spices and the abundance of fresh produce. His special love is towards fresh seafood preparation.In his class, he will detail the secrets of his Mexican traditional cooking methods. He will guide you to release the hidden flavors of typical Mexican spices!

Before the Class

During the Class

  • Cook along with the instructor or simply watch and entertain yourself
  • Interact and ask questions throughout the session
  • Mix and mingle with other participants after the class
  • Access real-time ChefPassport technical support, should any issues arise

Ingredient list: based on serving size for 2 people

If you plan to cook along you should purchase the necessary ingredients prior to the class.


  • 1-2 tomatoes (to your preference)
  • 20 g (¾ oz) coriander
  • 50 g (2 oz) red onion
  • 30 ml (2 tbsp) of lemon juice
  • 1-2 green chili (of your preference)
  • Salt to taste
  • Pepper to taste
  • 3 avocados 
  • 15ml (1 tbsp) of olive oil
  • Tortilla chips or saltine cracker as you want

Chicharrón de pescado (fried fish)

  • 1 kg (2 lbs) white fish filet (basa, finfish or tilapia)
  • 50g (2 oz) wheat flour
  • 50g (2 oz) corn flour
  • 50g (2 oz) paprika
  • 1 lemon/lime
  • 1 piece of ginger root (small size) 
  • Salt to taste
  • Pepper to taste
  • 4 gr (1 tsp) of garlic powder
  • 2 eggs
  • 200 ml (¾ cup) sunflower oil

Mexican sweet potato chips

  • 1 large sweet potato
  • Sunflower oil to pan fry

Cantarito tequila cocktail

  • Fine salt (for frosting) 
  • Ice to your preference
  • 50g (1 ½  oz) (1 caballito or jigger) of white tequila 
  • 1 lemon
  • 30 ml (2 tbsp) orange juice
  • 30 ml (2 tbsp) grapefruit juice 
  • Extra lemon, to taste
  • Orange and grapefruit segments (with peel) for decoration
